Pumpkin Whoopie Pies





These are so moist and yummy and so easy to make! My 3 year old wanted to help me, so I could not take pictures of the process of making them, but trust me, they are super easy and no secrets! They are just perfect to make any time of the year, and was approved by the little guy. You see, he is very picky when it comes to sweets... Yeah, it is just weird... I mean, he doesn't like chocolate chip cookies, or anything with peanuts... No jam or muffins... But these ones, as he said: "They are very yummy, mommy!" and gobbled two of them in no time.

Alphabet Match and more...



With a pre-schooler at home, I am always searching for a fun way to introduce him new things and most important, learn while having fun! Pinterest is a great source for ideas and I found this fun way to teach my little one recognize upper and lower case letters. I had all the materials and was ready to start, until I realized that the letter foam I had was too big for my little bottle tops so I had to use my second plan... or better, come up with one.

Omelet Muffins


Another Pinterest find! These Omelet Muffins are easy to make and delicious! You can also change the recipe to use up what you have in your fridge or just to change up a little bit. I have done countless time, always changing what I add in and they always comes out delish.

This time, I omitted ham/sausage and the cheese (we ran out!) and still came out pretty good, the kids gobbled them down, but picky hubby said that it wasn't his favorite. You know, he hates spinach... and I added too much of it!!

Breakfast Quesadilla




I have been struggling with breakfast lately. Kids just want to eat cheerios and since every morning is such a crazy time here at home that I end up skipping the most important meal of the day. So, when I saw in the refrigerator that I still had my homemade flour tortillas I thought I could come up with a breakfast burrito. So, pinterest I went... Found great ideas there and decided to make a quesadilla instead as I love that crunchy tortilla. So I quick prepared this delicious meal that was kid and hubby approved!

Valentine's Day!



Well, tomorrow is Valentine's Day, however, my son's school is celebrating it today with a party. I had to make or buy something to give out to his little friends, so I started to look for some ideas on Pinterest. I pinned tons of stuff, but with so little time on my hands, I had to do something simple and easy, but wanted to do a little gift that was different and cute at the same time.

Chicken Quesadillas




Since I made my homemade flour tortillas I decided to make some chicken quesadillas. I had some mushrooms, baby spinach and avocado that I had to use so I thought I could incorporate them to my quesadillas. See, my oldest son does not like any green food, or better say that he thinks he doesn't like them. If he can see it, he will pick it out and leave on the side of his plate, but if he can't see them, he will just eat and say "this is really yummy!". With this quesadillas, it worked somewhat. He grabbed some of them and left them out. So, next time I'll chop the spinach.

Homemade Flour Tortillas





When I had my first son, I went crazy and wanted to make everything from scratch. I was worried about what he would eat, so every time I would go food shopping, I would read the ingredient list and would always find something I wasn't happy about. It's funny how you change after you have a little one... 
At first, it was easy making homemade baby food. Actually, my first son didn't like much of the jar food, so I had to make everything at home. Baby food is pretty easy to make. I would just cook some organic vegetable and then blend on my little handy dandy mini food processor. I have a small one which is great for baby food and other small tasks.
